Blueberry Multigrain Pancakes - Vegan and Gluten Free

These easy to make, healthy pancakes are delicious and a Sunday favorite at my house

Ingredients
  

  • 1 big ripe banana
  • 1 to 1/4 Cup nondairy milk
  • 1 Tbsp apple cider vinegar
  • 1/2 cup old fashioned oats
  • 1/2 cup millet flour
  • 1/2 cup medium grind cornmeal
  • 1/2 cup blueberries
  • 1 tsp baking powder
  • 1 tsp baking powder
  • 2 Tbsp ground flax seed

Equipment

  • 1 Medium mixing bowl
  • 1 nonstick griddle
  • 1 nonstick spatula
  • 1 mixing spoon

Method
 

  1. Mash banana, then add milk and apple cider vinegar, stir and let sit 5 minutes
  2. Add Oats, millet flour, cornmeal, baking powder and baking soda., Mix well
  3. Fold in Blueberries
  4. On heated griddle, use 1/4 cup to measure out pancake batter.
  5. Cook at 350 degrees for 3 minutes and then flip for another 3 minutes.
