Vegan Banana Blueberry Pancakes

Easy vegan, no oil pancake recipe

Ingredients
  

  • 1 Tbsp. ground flaxseed
  • 3 Tbsp. water
  • 1 tsp. maple syrup
  • 1 tsp. baking powder
  • 1 cup vanilla oat milk or any nondairy milk
  • 1 tsp. vanilla
  • 1 cup whole wheat flour
  • 1/2 cup blueberries
  • 2 ripe bananas

Method
 

  1. Add 1 Tbsp. of ground flaxseed to 3 Tbsp of water. Let sit for 5 minutes.
  2. Mash the 2 bananas with a fork and add to flaxseed mixture
  3. Add 1 tsp. of maple syrup. Whisk all wet ingredients
  4. Add and whisk 1 tsp. of baking powder
  5. Add and whisk 1 cup of whole wheat flour
  6. Gently stir in 1/2 cups of blueberries
  7. While putting ingredients together, put your nonstick griddle or nonstick frying pan on the stove to heat up over medium heat.
  8. Pour 1/3 to 1/2 cup of batter into your hot griddle or frying pan. Cook until bubbles start to pop, then turn over with a spatula. If the pancake isn't cooked enough it may stick to the pan. If so, cook 30 seconds or so longer.
  9. Your pancakes are ready to eat. You can add unsweetened applesauce, cinnamon, or a little maple syrup on top of your pancakes.
