Vegan Oatmeal Chocolate Chip Cookies

These vegan oatmeal chocolate chip cookies are so easy to make and taste delicious. They are also very filling.

Equipment

  • 1 small mixing bowl
  • 1 nonstick cookie sheet

Ingredients
  

  • 1/2 cup Unsweetened applesauce
  • 2 tbsp. Maple syrup
  • 1 tsp. Vanilla extract
  • 1/2 cup Oat flour (Optionally:14/ oat flour and 1/4 cup whole wheat flour)
  • 3/4 cup Old fashioned oats
  • 1/4 cup Vegan chocolate chips
  • 1 tsp. Baking soda
  • 1 tsp. Cinnamon

Instructions
 

  • Mix unsweetened applesauce, maple syrup and vanilla extract.
  • Next add oat flour, old fashioned oats, cinnamon, and baking soda. Mix well.
  • Fold in chocolate chips.
  • Bake in a preheated oven at 350 degrees for 15 minutes.

Notes

I found that adding cinnamon masks the sweeter taste that the unsweetened applesauce adds. I usually make this recipe with 100% oat flour, but being almost out of oat flour one day, I used 1/4 cup whole wheat flour and 1/4 cup oat flour and the cookies came out very well.
