Mash chick peas with a potato masher and place in a mixing bowl
Chop onions, tomatoes, pickles, cucumbers and celery
Mix all veggies with the mashed chick peas
This dish usually has leftovers, so I take enough mixture for one sandwich and put in a smaller bowl
Add 1 Tbsp. mustard to the smaller bowl and mix together. Use the amount you like . You can use any type of mustard or any other dressing you like.
Get your whole grain buns or bread and enjoy your sandwich!
I put the leftovers in a plastic container and leave in the fridge. When I'm ready to make another sandwich or more, I'll add my mustard or dressing of your choice. That way the mixture stays fresher longer.
Notes
You can add other veggies such as radish or shredded purple cabbage or chopped spinach leaves or leave out any of the veggies you don't like.
