Welcome to my healthy vegan journey! I am a mother of three wonderful daughters. I’m married to a very generous and supportive husband, Gary. I’m a Grandmother to three adorable, handsome, loving grandkids, Lincoln, Hunter, and Cecilia. I had a TIA mini stroke in 2021 and found that I have a moderate 50-70% blockage in my P2 artery and mild 30-50% blockage in my P1 artery in my brain. Surgery is not an option since the arteries are only a single millimeter thick.

So, I decided to find a way to reverse the plaque buildup in my arteries. Dr. Esselstyn (of the Cleveland Clinic) has an informative book, “Prevent and Reverse Heart Disease“. Arteries are arteries, no matter where they are in your body. I was so excited to find something that I could do to reverse the plaque buildup in my arteries. I started following his eating plan the next day and haven’t looked back. He recommends eating vegan, oil free recipes, and no nuts to achieve this goal. My recipes contain no oil, no nuts, and some are gluten free.

Exercise and Meditation

Exercise and yoga keep my muscles in good condition, give me great balance, and stave off Osteoporosis. Meditation helps quiets my mind and reduces my blood pressure. I will share meditations that I find and enjoy. Guided meditations are my favorite as they help me focus on the meditations.

Cooking Vegan and Plant Based Whole Food Recipes

I love to cook and find myself in the kitchen everyday trying out new recipes and reconstructing some recipes to find the healthiest, vegan oil free, no nuts, no dairy, no meat, and sometimes gluten free foods. My goal is to share oil free vegan recipes. Though my husband, Gary, does not eat vegan 100% of the time, he is very supportive. He is my sous chef in the kitchen, and he is my partner in the making of this blog. He puts his stamp of approval on all my recipes. My goal in cooking is to make delicious food that anyone can eat and enjoy. Enjoying food is an important part of my life. Happily, my grandkids also love eating my new recipes.

I will also share restaurants I find that are vegan friendly and how I navigate eating out. My husband, Gary and I love to travel in US and Europe and, I will share with you how I manage to stay compliant while traveling.
