Vegan BBQ Sandwich
In my pre-vegan life I loved pulled pork sandwiches. I felt deprived that I would not be able to eat them again on my new eating journey. Luckily, while researching new food ideas, I came across soy curls. They sounded strange, but had lots of good reviews. I decided to try them out. They have no taste by themselves, so adding seasoning is very important. My first try was adding BBQ sauce. If you want a very easy meal, try making a vegan BBQ sandwich using soy curls. This sandwich is so tasty and filling! It feels like comfort food, so now it is one of my favorite sandwiches. Soy curls are very versatile. You can even use them to replace chicken or hamburger in recipes. I’m working on some other soy curl recipes which I will share with you soon.
Get the Ingredients for Vegan BBQ Sandwich:
- 2 handfuls soy curls
- 1 cup water
- 1/4 cup oil free bbq sauce
Lets Get Cooking:
Soak a handful of soy curls for 10 minutes then drain the excess water. Preheat a frying pan and add the soy curls and BBQ sauce. My favorite BBQ Sauce is Bone Suckin’ Sauce, which is also oil free. If you look carefully at the grocery store you may find another brand. I look for oil free and no high fructose sugar in the ingredients.
Cook for 5 to 8 minutes until the soy curls are hot and the BBQ sauce is caramelized. Put the BBQ soy curls on a whole wheat bun or whole wheat toast, add a tomato slice, arugula, purple cabbage, and onion. Now you have a great sandwich. I make this for lunch or dinner. If you have left overs, put them into a plastic container and heat them up the next day.
Enjoy!
