Vegan Oil Free Chick Salad Sandwich

One of my favorite lunches is my vegan, oil-free chick salad sandwich. You can eat it as a stand alone sandwich or as a salad. My favorite whole wheat buns are Ezekiel Sprouted Multigrain buns. I like to add spicy brown mustard as my substitute for vegan mayo, as I eat oil-free foods. You can experiment and see what flavors you like. Also, I only put mustard on the sandwich mixture when I am ready to eat my meal. I found the leftovers last longer in the fridge with out the mustard or whatever toppings you want to use.

  • 1 15 oz can Chick Peas
  • 1 small onion – diced
  • 1 Cup diced tomatoes
  • 1/2 Cup chopped pickles
  • 1/2 Cup chopped cucumber
  • 1/4 Cup stone ground mustard
  • 1/4 Cup celery
  • 1/2 Cup of Red Pepper

Mash Chick Peas

  • Rinse and drain one can of chick peas or garbanzo beans. Place in a mixing bowl and mash the chick peas with a potato masher and . Next, dice the onions, tomatoes, pickles, cucumbers and celery. Mix all veggies with the chick peas.

  • This dish usually has leftovers, so I take enough mixture for one sandwich and put it in a smaller bowl. Then add 1 Tbsp. mustard to the smaller bowl and mix together using the amount you need to make the number of sandwiches you want . You can use any type of mustard or any other dressing you like. Also, you can leave out any ingredients you don’t care for or add something else like radishes or shredded purple cabbage

  • I put the leftovers in a plastic container and leave them in the fridge. When I’m ready to make another sandwich or more, I’ll add my mustard or dressing of your choice at that time. That way the mixture stays fresher longer.

  • 1 sharp knife
  • 1 mixing bowl
  • 1 smaller bowl if need for part of the mixture
